New Year's Eve Chicken Curry 2024



 Hearty New Years Dinner Idea

- Chicken Curry + Steamed Rice + Kale chips

- Maybe a salad & pickle as accompaniment

- Mango Ice cream (Haagen Das)

- Champagne

CHICKEN CURRY

Ingredients:

  • Chicken (Boneless Skinless Chicken Thighs) 2 packs or 3 lbs
  • 1 can diced tomato
  • 1 small can tomato paste (just 2 to 3 teaspoons)
  • Whole Milk Plain Yogurt 1 to 1.5 cups
  • Spices:
    • 3 tsp Coriander powder
    • 4 to 5 dashes Cayenne (can add more but this level is good for kids too)
    • 1 tsp Turmeric
    • 1 tsp Cumin powder
    • 7 Cardamom
    • 2 Cinnamon
    • 3 to 4 Bay leaf
    • 7 cloves
  • 1 piece ginger fine diced (around 2 tblsp)
  • Garlic cloves fine diced 5
  • Water 3 cups
  • Onion 3 small yellow diced
  • Cilantro (optional)
Method: 

  1. Dice onions, ginger, garlic, cilantro
  2. Heat canola in a heavy bottom (I like to use copper bottom pan)
  3. Sautee whole spices. Add ginger, garlic, onions. Then masalas and 1 tsp salt. 
  4. Saute for 3 to 4 minutes. Deglaze with tomato and water. Sautee for another 4 to 5 mins.
  5. Add Chicken cut with meat scissors into small bite size pieces
  6. Sautee and when slightly browned add the yogurt (or Coconut milk)
  7. Cook till oil comes out. Sprinkle cilantro at the end and this is optional. 
Rice: Used a rice cooker but as soon as done, remove and put into a non stick container or pot to fluff

KALE CHIPS: 
- 1 large bunch Kale
- Remove from hard stem and dice
- Coat with olive oil (1 tblsp), salt, black pepper
- Heat oven to 350. Spread Kale on a good Sheet pan. Cook for 20 minutes. Check at 15 but it needs 20.
