Spinach Soufle

This is a delicious way to make Spinach and is excellent side for Thanksgiving or any potluck. I made 1.5 times the recipe just so it was enough for 12 Adults and 5 kids.

Bake 35 mins
Makes 6 servings

2 packages (10 Oz) frozen chopped spinach thawed and squeezed dry
1 pkg (8 Oz) cream cheese cubed
1.5 cups shredded Monterey jack cheese
4 large eggs lightly beaten
1/4 cup butter melted
1 garlic clove minced
1/2 tsp salt

1) In a large bowl combine all the ingredients.
2) Transfer to 1.5 quart baking dish
3) Bake at 350 until edges are slightly browned, around 35-40 minutes

Tastes even better for leftovers.
