Chicken Tacos made with a Chipotles - Adobo marinade
Most of my recipes happen without much planning. I found 2 packs of chicken in the freezer - one was bone in and the other boneless. I actually think this worked out because the meat against the bone is usually tastier and gives a flavor punch!
My general inspiration for this recipe is the can of Adobo with Chipotle chili's - I always stare at them in the store wondering how they taste and what I would make with them. They are soooo flavorful - smoky, spicy, earthy, beautiful flavors..
This feeds 5 to 6 people. Each gets 3 tacos.
- Chicken Thighs: 1 Pack Boneless Skinless (4 pieces) and 1 Pack Bone In Skinless (4 larger pieces)
- Marinade:
- Lime zest of one lime (can use a second)
- Lime juice of the same lime (can use half of another lime)
- 1/2 tsp salt
- Cumin 1 tsp
- Can of Chipotle chilis in Adobo sauce (available in any grocery store) Chipotle Chili in Adobo - (Use 6 chopped + all the sauce and onions inside) To be honest I could have used more.
- Olive oil 1/4 cup
- 3 to 4 garlic cloves diced
- Fresh Salsa:
- Red onion dices small 2 cups
- Vine ripe tomato 2 diced
- Cilantro - handful diced small
- Salt, Pepper (whole is possible)
- Olive oil - couple tablespoon or drizzles
- Mix with fingers
- Flour Tortilla
- 2 small packs of 10
- Queso Fresco Cheese Queso Fresco Cheese
Directions:
1) Marinade the Chicken:
- Mix all marinade ingredients using a spatula
- On a paper plate salt and pepper the chicken on both sides (use whole kosher or sea salt)
- Add the chicken to the marinade. Put in a ziplock and keep for 1 to 24 hours in the fridge.
2) Make the salsa by mixing all the ingredients. Salt and pepper to taste
3) Cook the chicken (total 12 to 15 mins)
- In a heavy bottom pan, add canola oil (or grapeseed) and add the chicken. Cover with foil and heat on Medium to High heat for 6 minutes. It will smoke. Reduce heat is its getting too burnt.
- Turn chicken and repeat on the other side. The inside temp needs to reach 165F . This can be checked with a thermometer in the thickest part or just cut in center with sharp knife to make sure it is cooked. If needed cover and cook for 2 more minutes.
4) Assemble - Tortilla, Chicken, Salsa, Cheese. ENJOY! Its soooo yummy.
